Whom You Know Kicks off our Coverage of Rick's Picks with Phat Beets: Perfect for Thanksgiving!


"Phat beets?  Am I reading Whom You Know?" the Whom You Know reader is thinking.  We know, we know.  You think the word "Phat" is not even in Peachy Deegan's vocabulary.  She is a proper person hailing from the green pastures of Connecticut suburbia that worships the King's English in her little black dress and pearls.  But these beets are so amazing, it has made its entrance into her word repertoire.  


Peachy Deegan has met Rick Fields, founder of Rick's Picks, a few times at different Manhattan culinary experiences and she must say, she is so impressed with their variety of high-end choices they have made their way into Peachy's Pantry!  They should make their way into yours too!  Enough in the media of Michael Jackson's song being associated with the phrase; we must recommend for Thanksgiving and the other 364 days of the year that you BEET IT.

After sampling Phat Beets I must admit I am hooked.  Of course, I am a beet lover, so that is a good place to start, and if you are too, or if you have never tried beets, this is a great place to start.  I tried these aromatic pickled beets in a variety of forms.  First in a mixed green salad with no dressing, just letting the natural juices from the product act alone.  I was most looking forward to the beets sliced on crostini toasts with soft goat cheese. After going out and getting my favorite goat cheese, was hardly able to stop munching.  These sweet and tart beets were a perfect match, and it makes an easy and attractive appetizer for entertaining.  They are pickled in a variety of spices, including rosemary, ginger and lemon.  They really remind you to always have beets around the house, as I often go too long without this biennial around.  Phat Beets are recommended strongly by this veggie lover, and don't forget how healthy they are for you too!

Rick's Picks Phat Beets are amazing.  Especially if you love beets with goat cheese.  Another great way to try them is with spinach salad.  You can put beets with just about anything!  These beets are made with aromatic spices, which accent the sweet-tart flavor of these fresh pickled beet slices.  They are pickled in rosemary, ginger and lemon. Apart from the wonderful flavor, they are rich in fiber, iron and vitamin B.  So delicious!  And so healthy.  What a combination!!!

Rick's Picks - phat beets:  The beets are very aromatic.  As soon as you open the jar your can smell the wonderful aromas of ginger, rosemary, cloves, allspice and cinnamon.  I like the packaging.  The jar and label resemble a "home canned" jar.  It makes you feel like your're eating your hometown family pickled beets recipe.  The large, thick chunks of beets are firm and very fresh-tasting.  They are not mushy like the store-bought type.  You can enjoy them by themselves if you like a hearty, spice-filled pickled beet.  Or you may pair them up with a lusious fresh green salad.  You might even feel adventurous and try it in a unique appetizer form.  It's nice to know that this local product is made from beets in season, not forcing the true quality of the vegetable.  Thanks for the opportunity to sample this new product, Rick and Peachy!
