Why are raw tomatoes good for you?

Tomatoes - raw tomatoes simply have more antioxidants and phytochemicals, as do any raw vegetables. Cooking does deplete some of these nutrients. However, with tomatoes cooking actually enhances the lycopene, which is beneficial for prostate health and protects against many cancers.
