Clover Club (this version served at The Empire Room, NYC)
1 egg white
1/2 oz. Mathilde raspberry syrup
1/2 oz. fresh lime juice
1/2 oz. simple syrup
1 oz. Beefeater Gin
1/4 oz. Noilly Prat Dry Vermouth
Directions: Dry shake (shake w/out ice) first for approx. 10 seconds.
Add ice and shake again for another 10 seconds. Strain into chilled
cocktail glass.
Garnish: mint sprig and raspberries
