The stats:
Green fruit from Western Australia with apple notes. Mildly herbaceous and very harmonious.
This Italian variety grown in Australia is highly fruity with floral and artichoke midnotes and a big nose of apple peel. A sweet oil, the ripe fruit quickly leads into a vibrant finish that does not linger.

The Fig & Olive olive oils were originally sampled amongst 3 different varietals that were brought out for us to sample as a precursor to appetizers and dinner at the Fig & Olive Restaurant on the Upper East Side.  While the varietals from Tunisia & Chile were good in their own right, our party of 4 unaminously voted on the Australian one as our favorite, so we decided to try another Australian one.  Possessing a subtly fruity and herbaceous essence, it was pleasing to the palate and kept us dipping almost 2 plates of focaccia bread into and happily munching away.  It has a clean taste and a vibrant kick that seems to pair well with Mediterranean fare as well as pasta, salads and the aforementioned bread.  The slight sweetness of this varietal would also lend well to sweets, perhaps standing in as a suitable (and healthy) replacement for butter in some dessert recipes and imparting a unique enhancement to the flavor.  This is definitely a versatile olive oil to keep handy in the kitchen pantry, and one which will serve many purposes.  

Fig and Olive have the very best selection of Olive Oils.  I was fortunate to try various oils at the wonderful Fig and Olive restaurant located on the Upper East Side of Manhattan.  For a light finishing olive oil I can highly recommend Frantoio from Australia.  The oil is rich in fruitiness with a pleasing vibrant finish.  You will notice a clear crisp apple taste.  This sweet oil pairs perfectly with pasta or salad.  I starting my tasting with fresh bread and used this tasty oil for dipping.  It paired perfectly and tasted light.  I then added a touch to my chicken salad and was surprised how well it brought out the flavors of my dish.  This finishing oil is the perfect compliment to a hearty salad all the while maintaining my healthy lifestyle.

We recently received and a bottle of Fig & Olive's premium Australian Frantoio Olive Oil. This olive oil is rich and complex with subdued flavors of sweet, ripe fruit (apple peel), citrus and artichoke. The olive oil is unfiltered and is of a medium intensity with a smooth taste. We were very impressed with the consistency and balance of flavors (strong but not overpowering). It pairs well with a nice white wine and fresh bread or in a light salad. The olive oil is arguably the best we have ever tasted. Indeed, we did not know that olive oil's could be such a gourmet delicacy, esp those from Australia. Our initial skepticism was quickly replaced by intrigue as to the unique flavoring.
