Peachy Deegan is not known for her culinary skills. She is known for her food critic skills and loves to use them at Swifty's. On occasion, she does come up with something brilliant in the kitchen, and she invented this Spinach and Artichoke Dip, which she makes in the fabulous Vitamix that she is in love with. You need a Vitamix if you don't have one-here is our previous coverage on it:
It make a lot of great dishes and it makes them FAST. We love all kinds of speed. There are a lot of hot spinach dips but who wants to get near anything hot when it is 100 degrees??? Not Peachy.
Why does she like this? It is easy, cold, and we think healthy. Although Peachy hates chic peas and most anything from that region food-wise (never serve her flat bread unless she is going up for communion she likes fluffy bread), you cannot even taste chic peas in this and they get rid of the mayo/cream cheese base that is usually in dips which is really excellent in terms of taste but will not make you look great in your bikini. Here's what you do:
Ingredients:
Package of frozen spinach
Artichokes in jar
2 cans chic peas
1 onion
1 garlic (yes we love garlic)
Olive Oil
Skim milk
Microwave spinach for 4 minutes. Put in Vitamix. Make sure none of it is frozen anymore.
Put a bit of olive oil in frying pan. When it is hot, add your onion, chopped up, and all your cloves of garlic from your garlic. When the onion and garlic are cooked, add them to the spinach in the Vitamix. Add the chic peas and artichokes into the Vitamix. Blend at speed 4 or 5 for 30 seconds. If it is too thick, add skim milk, a little at a time but not too much because it will get runny fast. Blend for 10 seconds on speed 4 or 5. The dip should be totally consistent and you have no chunks of anything in it now.
Serve with artisan bread. We like white chunky fluffy Italian bread but wheat is probably a smart choice also, as well as pumpernickel.
