HARVEST & AGEING
Grapes are handpicked during the last week of September, at peak ripening, moreover according to the typical training method, known as
"Metodo Spalliera" , where the stem can be as long as one meter and tied to a horizontal wire, assuring a high quality final product, bringing
out the aromatic fruity features of the original vine. The grapes are soft pressed and fermentation occurs at 18°C in temperature controlled
stainless steel tanks, mainly located in our new winery inaugurated in 2004, these two significant steps yield a steady quality wine
for our customers, while maintaining the typical fruity bouquet with hints of Golden delicious apples and white fruits. Between the two above
mentioned steps, a natural decantation is employed to divide the lees from the free-run wine which contains a high concentration of sugars
and fruity aromas. To obtain small and fine bubbles called "perlage" our expert oenologists make a selection of natural yeasts. Three
months Charmat ageing, followed by one month in the bottle.
WINEMAKER’S NOTES
Straw yellow color, joined with a fine perlage and a fruity taste are the distinguishing features of Valdo’s Brut Prosecco DOC. Well-balanced
structure, matched with its flavorful and aromatic fruity fragrance make it the perfect pairing with starters and particularly with delicately
flavoured dishes and especially seafood. Excellent as aperitif due to its distinctive characteristic of being "easy to drink", best served
in a flute glass at a temperature of between 6-8°C to bring out its perfumes and flavours. Versatility and freshness are its strengths.

I've been a Prosecco fan for years and am always surprised how many of my friends have never tried one. There are a few nice Proseccos out there, but the Valdo, imported by Pasternak, is just gorgeous. There is a lovely hint of pear and apple in the flavor and just enough sugar to bring out the fruity overtones. But, this is still a dry brut, and the sweetness in understated. This is the ideal starter for a romantic Valentine's evening. This tasty wine is sure to kick off a mood of romance and celebration. This Prosecco also makes an appealing gift, as well. I absolutely love prosecco! I always seek it out when I am looking to celebrate a special occasion. Unfortunately, the problem I usually have is choosing which bottle I would like to bring home from the store. Now that I have tried Valdo Prosecco Brut, I wont ever have that problem again. Valdo is my new favorite! This delicious Italian sparking wine has a very pale yellow hue. It gives off a sweet flowery aroma. The taste is light and quite sweet for a brut wine. I usually prefer a sweeter wine, but I enjoyed this brut very much! In addition to the sweet taste, there are hints of apple and pear in the flavor as well. It would pair quite well with seafood. Although, I have to say, this wine would be great with almost any meal. In fact, it would taste great all by itself! Next time you are looking for the perfect prosecco, choose Valdo! Your taste buds will thank you!
Prosecco’s have commanded a lot of attention lately. More and more champagne drinkers are looking for a comparable alternative at a more affordable price point. Therefore proseccos are taking charge. The Valdo Prosecco is a great option. At around $14 a bottle, you will be amazed at how much you get for the price. First, you do not lose the flavor with this prosecco. The peach and pear flavors are crisp. It has a light body and perfectly balanced acidity making it a easy prosecco to drink. But my favorite aspect is that it is drier than most proseccos. My palette certainly does not crave the sweeter proseccos that give you the pounding headache the next day. I also like the look of the bottle which does make the first impression. It is regal looking with its dark bottle and gold lettering. With the crest on top it gives it a old family kind of appeal which makes it feel as if they have been perfecting this sparkling wine for decades. So give it a try and you will see that there are wonderful options available to you maximizing your dollar and providing a high quality. Molto Bene!

When I have picked out of my comfort zone before, I've picked wines I've not been fans of. When I tried the Valdo Prosecco, I immediately loved it. Peachy Deegan has never been wrong about wines I should try! I had never tried any Prosecco wines before. I was glad I tried this one. I liked that it had a light, sweet taste to it. Because the weather is so cold out, by the time I got home, this wine was already cold. I enjoyed it chilled. I have several friends that I think would love this wine and I immediately started texting and messaging them to tell them about the Valdo Prosecco. This is one that I plan on taking with me when my friends plan a get together. This is one wine that I know I'll have to keep stocked in my wine cabinet for a rainy day. I am so glad I went out of my comfort zone to try this wine. If I hadn't, I would've missed out on a great wine. I highly recommend it! It would also make a wonderful wine to serve with a romantic Valentine's dinner.
