Champagne Wishes: Carpineto Dogajolo Toscano Bianco I.G.T. Highly Recommended by Whom You Know

E’ il risultato di un attento studio di zonazione, condotto nella nostra azienda di Chianciano,
volto all’individuazione dei terreni con le caratteristiche più adatte alla coltivazione delle varietà
di uve bianche che compongono questo vino.
Uve usate: Chardonnay, Grechetto, Sauvignon Blanc
Tecnica di vinificazione: le uve, raccolte a mano, sono state private dei raspi
raffreddate e tenute per breve tempo in macerazione con le proprie bucce. In seguito, il
succo è stato separato dalle parti solide per mezzo della pressatura, decantato e avviato
alla fermentazione. Tutto il processo è avvenuto a temperatura controllata.
Affinamento: il vino ottenuto è stato immediatamente filtrato e tenuto a basse
temperature per una spontanea e naturale stabilizzazione oltre che per mantenere le
caratteristiche fruttate nate dalla fermentazione. Non ha subito trattamenti chiarificanti
e stabilizzanti con prodotti chimici.
Colore: giallo paglierino con riflessi verdognoli.
Profumo: piacevolmente fruttato, con caratteristiche aromatiche volutamente non
eccessive.
Sapore: buon corpo e giusta acidità, pur essendo secco mantiene un finale vellutato e
carezzevole.
Gradazione: 12,5% vol.
Acidità totale: 5,2 g/l
Zuccheri residui: 1,8 per mille
Temperatura di servizio: 10-12°C. (50-54°F.)
Abbinamenti gastronomici: eccellente come aperitivo o con piatti tipici mediterranei,
come: insalate, pasta, frutti di mare e carni bianche. Ottimo anche con piatti asiatici
saporiti e piccanti.

White ‘Super-Tuscan’ produced from estate grown vineyards planted after a careful study
aimed at identifying the best environment for the production of this wine. The hillside, dryfarmed
vineyards are located within the Chianciano and Montepulciano (Siena) property.
Grapes: Chardonnay grapes blended with Grechetto, Sauvignon Blanc
Vinification: The hand harvested grapes are destemmed, the juice is then cooled and
left with the skins for a brief period of time. After pressing and settling the wine is
fermented under temperature-controlled conditions.
Finishing: the newly formed wine is immediately racked off, filtered and kept at low
temperatures. This maintains the fruity aromas in their freshest state and allows for a
natural stabilization process. This wine has not been subject to clarifications or
stabilization with chemical products.
Color: straw yellow with green highlights.
Bouquet: pleasantly fruity, elegantly aromatic and harmonious.
Flavor: medium body with agreable acidity and a dry, pleasantly velvety, soft finish.
Alcohol: 12.5% by volume.
Total acidity: 5,2 g / l
Residual Sugar: 1,8 g / l
Serving Temperature: 10- 12°C, 50-54°F.
Gastronomy: excellent as an aperitif or with typical Mediterranean cuisine, such as
salads, pasta, seafood and white meats. Excellent also with flavourful, spicy Asian
foods.

I'm always a little uneasy about buying mixed wines. I tend to be a purist. However, Carpineto Dogajolo Bianco surprised me! The first thing I noticed was the attractive bottle. It reminds me of a classic olive oil bottle with a beautiful label. This makes sense because the wine is from Tuscany! Carpineto Dogajolo Bianco is a blend of Chardonnay, Grechetto and Sauvignon Blanc. Though it is categorized as a dry still wine, I didn't find it to be overly dry and in fact wets the palate really well! I find Giovanni Carlo Sacchet's winemaking techniques quite impressive. They planted the vineyards only after carefully studying the best environment for producing the wine. They also do not subject their wine to chemical products for clarification and stabilization. This type of attention to detail has to be the reason why this wine is so delicious! The aroma of the wine is fruity, yet still clean. This light to medium bodied wine is perfect for a nice brunch or an evening of tapas. I happened to enjoy mine with brushetta which was an absolutely perfect combination. Carpineto Dogojolo Bianco comes highly recommended!



I adore a good white wine and am always on the prowl for a new one to add to my list of favorites. Carpineto Dogajolo Bianco just made its way into my top five! Hailing from Tuscany, Italy this wine is simply delicious. 40% Chardonnay, 30% Grechetto, and 30% Sauvignon Blanc = 100% perfection! Award-winning winemaker and founding partner of Carpineto, Giovanni Carlo Sacchet has perfected his craft. After studying which type of environment would best suit the production of this wine, Chianciano in Siena was chosen. Drawing its name from the Italian word doga (meaning "stave", the narrow strips of wood used to make casks), these grapes were very carefully planted using the guyot training method. This method is named after Dr. Jules Guyot, a French physician who is remembered for his improvements in the production of high quality wine. The grapes were hand-harvested in September, were immediately destemmed and were cold soaked for six hours in stainless steel. After pressing, the grapes were fermented, filtered and bottled. The end result of this detailed and intricate process? A simply fabulous wine! This wine can be enjoyed with hors d'oeuvres, seafood or salads or on its own as the main event. I loved the light, fruity (but not too fruity) taste of this dry white wine. I think I have found my new summer go-to white wine. It is divine!

I am seeing a trend in white wines with all of these wonderful blends being introduced into the market. When my 2010 bottle of Dogajolo Toscano arrived by wine maker Carpineto, I was so excited to try it. First the label is stunning. Beautiful gold and green leaves adorn the bottle inviting you to open it immediately. It seems that if they balance different grapes they can make some very interesting wines. 40% Chardonay, 30% Grechetto and 30% Sauvignon Blanc are blended perfectly to in their central vineyard in Tuscany. The straw yellow color with subtle tones of green make for a beautiful shade. The flavor is fruity, yet not too sweet. Very dry with a strong finish. I recommend pairing it with a wonderful seafood spread. It is a perfect adornment to any table in looks and taste. So when planning your next soiree, make sure to have a case on hand. This wine will go fast.


Carpineto just came out with a hip fresh tasting wine called Dogajolo Bianco.  Straight from Tuscany Italy, this wine is amazing tasting and is as smooth as they get for a dry still white wine.  It has 40% Chardonnay, 30% Grechetto and 30% Sauvignon Blanc with 12.5% alcohol.  Dogajolo Bianco has an amazing fruity aroma and taste that went amazingly with the fresh balsamic salmon salad I had.  Served slightly chilled, Dogajolo Bianco is refreshing and savoring.  I highly recommend to all wine veteran lovers and first timers alike.  I am usually a scotch guy and love my reds, but this is easily one of the better whites I have had in a long long time.  Make sure to ask your waiter or waitress next time you are at a nice restaurant with a wine list to try the Dogajolo Bianco by Carpineto, I promise you won't regret it.  Simply delicious.

2010 Carpineto Dogajolo Bianco brings a bit of Italy to your home. I really appreciate the how amazing this nice white wine is. It's beautiful light color screams summer! I chilled my bottle for few hours before I took it with me to a dinner party. We cracked it open and voila! The amazing fruity aromas were all over the place. I couldn't get enough of the fruit and acidity on my tongue. I was enjoying my glass with some cheese on a balcony . Honestly it couldn't get better than that. I love that you can taste the amazing fruity taste of the wine but that it's also crisp and smooth. I was able to control myself not to drink the entire glass in 2 min so that I could enjoy it with the start of my meal. The salad popped with the help of the wine. All of my friends who had the chance to try this amazing wine also couldn't get enough. My fault I only brought 1 bottle as you can see it was very popular. So if you want to see what an amazing wine this is get out there and grab a bottle!
