It homogenizes beautifully in a vinaigrette, and is beautiful for dipping a crusty bread. I used it to make some bruschetta, and it lends a delightful taste and aroma to the mix. For those interested, the recipe includes garlic, tomato, red wine vinegar, vanilla, basil, and olive oil. The hint of vanilla brings out the taste of the olive oil, adding to it's smoothness. I used it in a sausage, onion, and potato dish I made. It has never tasted so good. I couldn't believe the flavor it had. It was a little sharper than most, but I liked that about this olive oil.
