It's not who you know, it's Whom You Know and we were surprised to see Stamati when we arrived at Ethos!  Stamati did a fantastic job at a competing Greek restaurant that we previously reviewed and we were not aware that he had moved on to Ethos...he promptly seated us at a beautiful private window table in the corner and continued to show us why he is an excellent General Manager.  Ethos is a gorgeous restaurant on First Avenue that is worth the trip east, and it has a summery Greek theme that is sure to delight all with discriminating taste.  Owner Yanni made a brief appearance when we arrived.  Peachy started with the Kolokithokeftedes: Zucchini Fritters and Tzatziki Dip.  It was a fresh, filling start!  Attractively arranged, it tasted delicious.

Silver Oak Napa Valley Cabernet Sauvignon was a winning choice chosen by our brilliant panelist, who knows even more about restaurants and wine than Peachy...she brings intelligent people that she can learn from sometimes!  It was rich and deep and proved to pair well with our meal.
A classic, the Horiatiki Classic Greek Salad cut to order will impress you.  Every component is sliced generously and is freshly presented.  It is lightly dressed with salt and pepper and we tasted oregano and thyme as well.  Tomatoes, cucumbers, peppers, onions, olive, feta and EVOO come to the salad party!
As it's a greek place, the fish is simply out of this world so we took that route.  The Black Sea Bass seemed especially enticing and it is served whole.  From the Atlantic Ocean, this wild bass had a mild flavor, flaky texture, and most importantly was properly cooked with moisture retained.   Some fish can be served overdone which is not as nice. This is definitely an entree we'd order again.  We were surprised with dessert and preferred the chocolate mousse and were pleased to also try the galaktoboureko, which we understand to be traditional.

The first course I ordered was the Octapodi Sharas: Sushi Grade Mediterranean Grilled Octopus, Onions, Capers, Fava Puree, Lemon and Herbs was tender and properly cooked.   As a main course I selected the Xifias: Grilled Loin Center Cut Wild Swordfish with Spinach Rice Pilaf (shown below).  
I found Ethos to be first class greek cuisine in a very relaxed ambiance , with good service and attention from a excellent manager host!
