The tortillas smelled amazingly fresh upon opening the package. They have a smooth texture. Perfect for wrapping sandwiches, these tortillas are are thick and pliable: they wrap without tears. When used in a baked dish, the tortillas maintained their softness. Even when meat and toppings were layered on, they held their shape and did not break. The flavor of the tortillas paired perfectly with the Mexican dish. The small sized tortillas are perfect for appetizer wraps or for children-sized sandwiches.
The Vermont Company tortillas are so flavorful that it is hard to believe that they are so healthy. With only 3 simple ingredients: 100% organic corn, water and lime, the wholesome taste is remarkable! It is very difficult to find healthy options without all the additives, preservatives, and sodium. These tortillas are not only delicious but healthy and gluten free too. The savory taste of the tortillas are so versatile. They are delicious as a breakfast burrito with scrambled egg or as a lunch/dinner meal with chicken or beef. The “sky is the limit” with the menu possibilities! It is nice to know that the corn used in the tortillas is grown locally in Vermont and keeps our local U.S.A. farmers in business. With the larger tortillas I created satisfying burrito-type wraps with: pulled chicken, corn, black beans, salsa and cheddar cheese…topped with fresh, cut up tomatoes and a greenery of choice. The smaller-sized Vermont Tortillas I used as muffin-style liners for appetizer-sized tortillas filled with: ground hamburger, sautéed Vidalia onions, and peppers colored red, yellow and orange, topped with grated Kerrygold Irish Dubliner cheese, then topped off with a home-made cornmeal muffin recipe. Vermont Tortilla Company was founded in 2015 by April and Azur Moulaert, food loving ecologists turned food producers. We have always had a passion for food, and for foods that are produced in a sustainable manner. During our annual trips to Mexico we discovered that we loved corn tortillas made from corn grain, and that we could not find anything like this in Vermont. A light went off- why don’t we bring delicious organic corn tortillas to Vermont?
First we had to figure out how to make them. The vast majority of corn tortillas you will find in markets in the United States are made using “masa harina” or dried and powdered corn flour. This is definitely the easiest way to make them. However a handful of places in the United States make corn tortillas the traditional way, using an ancient process called nixtamalization. In corn nixtamalization the corn kernel is soaked and cooked in a lime solution which removes the skin of the kernel and produces a soft dough. Nixtamalized corn is more nutritious, has less mycotoxins, and has better flavor. The corn is then ground and made into tortillas.
Our artisanal tortillas are produced with locally sourced organic non-GMO corn. Our tortillas come in two sizes- 4” and 6”. They are naturally gluten free with no added preservatives. Our only ingredients are corn, water, and food grade lime. Our tortillas have an earthy, intense flavor of volcanic stone-ground corn steeped in mineral lime. Once you taste the difference, you will not want to go back to the other brands!
