The Marshal by Charlie Marshall has been one of the most consistent performers throughout the years and Charlie's intelligent and talented culinary expertise is far larger than the space you find at The Marshal! There are three salad choices, and above meet the Apple, Cranberry and Sunchoke Salad. Cranberries always say winter to us and they are our favorite ingredient here. Sliced apples, sunchokes, arugula, blue cheese (strong! You should be a blue cheese fan for this), walnuts, bee pollen, and local honey vinaigrette round out this plate.
We love the Three Kale Salad and its simplicity. Watermelon radishes are high on our list here and also toasted hazelnuts come to this party with garlic aioli on the side.

Peachy is a huge Burrata enthusiast and what is special here is both the high quality and the fact that it's American, due to Charlie's dedication to local ingredients. When mozzarella to burrata is upping it to Ferrari status, here it is up'ed to Corvette C8 Status which obviously is better!!!!!!!!!!!!!
It is tremendously exciting to introduce you to a new menu item: Local mushroom risotto. It boasts a great texture and creamy consistency you'll adore. Local shiitake, button, portobello and oyster mushrooms swimmingly create a dish to desire with shaved local hard cheese.
Another new one is Local Broccoli Rabe and Lion's Mane Mushrooms. Soy, white wine, grapeseed oil, garlic and toasted hazelnuts bring an aura of winter to your appetite. Also, never forget to order the wood oven french loaf which we would not be without!!! It is superlative with whipped butter which comes with it.
To us, winter is prime time comfort food season and these two dishes capitalize on that idea. The French Onion soup above is an americanized edition of the french classic with local onions, beef stock, crostini and swiss. Carbs are Peachy's friend and she is always ready to hug the wood oven mac and cheese which Charlie especially excels in. Do not skip the bacon which makes it even better!
There are seven entree choices, and the winteriest to us are the meatloaf above and the pork ribs below. We can't think of anywhere else that has meatloaf on their menu that we recommend, so do try the local sirloin, chuck and flank steak blend Charlie creates with parsnips, turnips, carrots, local kale and onion gravy. The blue cheese in it is just a hint so it does not overwhelm you one bit. The ribs are ubertender and literally fall off the bone with their brilliant molasses bourbon bbq sauce! If you like coleslaw you are sure to love this.
The farmers market sides are tiny cast iron dishes that add a bit of wow to your Charlie experience and often incorporate deliciousness into vegetables in the most welcome unexpected way. If you can't get someone to eat their vegetables, give them any of these.
Roasted Piper Mashed Potatoes with BACON!
Rainbow roots! Looks like dessert but no it's beets, carrots, rutabaga (an uncommon menu item we love to see here), greek yogurt, dill, honey, butter and horseradish!
Of these we liked the Sweet Potato and Kale au gratin the most.
Fudge is the correct answer to the perfect conclusion during winter at The Marshal!
