The Filet Mignon is to-die-for with Bearnaise Sauce and the Lobster Souffle is unbeatable and the best edible Peachy has had so far in 2025!
It's not who you know, it's WHOM YOU KNOW and those in style also know it's QUI TU CONNAIS!  This site can be translated into multiple languages - see top right- and certainly all of the thousands of posts can be read in French, our second language.   And, we know FRANCIS STAUB!!!!
This is our second visit to this meat-focused Brasserie (all meat is locally sourced from a small farm close to the town of Sandy Hook, Connecticut), and we are equally thrilled.  If they were American, we'd call it a steakhouse but mes amis c'est francais!!!
This is a one-of-a-kind experience that celebrates the legendary career of Francis Staub, and there's only one Chez Francis.   You can tell in every dish the deep respect for the history and tradition of French cuisine and all that's intrinsic to French culture!   It's authentic and has a management team that is also all-French, further attesting to the wonderful quality experience.  
You'll be graciously greeted and they attend to every last detail which we love; the matches and business cards at the front desk are of course displayed in rouge splendor in Staub pots!
It's primetime winter dining now and the winter menu is just spectacular and deserving of your attention: 193 coveted seats all inside are looking forward to welcoming you.

  It goes without saying if we feature a place, the bathroom meets our approval.  La salle de bain ici est tres bien!!!!  That means the bathroom here is very excellent.  You're greeted with a Rose and it is completely spotless and well-lit, exactly what we are looking for.  Furthermore, your hands don't get dirty flushing: you just wave your hand at the toilet and it flushes.  Now everyone else has got to up their bathroom game because Francis just raised our standards.
Baby, it's cold outside so the Soupe A L'Oignon Gratinee is a must in January!  French Onion Soup boasts a tremendous depth of flavor and is topped off in spectacular fashion with a fabulous combination of Gruyere and Comte Cheese.  Fresh french bread comes to the party to graciously vault into the steamingly inviting mixture.  La Salad du Marche is a nutritional feat that is an essential to every meal at Chez Francis: Market Salad with Dijon Mustard Vinaigrette is an all-star lineup of high class salad elements to brighten your winter.  They listened and put the dressing on the side as we asked.  The robust, healthy salad of carrots, apples, radishes and greens was a total winter triumph.  We hear the Frisee Aux Lardons is also amazing so that is on our future ambition list.
Of course the best French places have the best French wines!  We were so happy with this 2014 Margaux from the last visit, we embraced it again.  Its depth of flavor and superior versatility continues to perform impressively.  It is exactly what we are looking for to sip at dinner.
Peachy does not pretend smile; it's just not in her nature.
We predict you will have a sourire just as big as soon as you start dining at Chez Francis.
They are souffle specialists!  We spy four souffle choices on the dinner menu right now.  And this time, we were beyond delighted and totally enthralled with the Lobster Souffle, which is simply the best thing Peachy has eaten at all in 2025: check out the video.  You will notice there is no verbiage emanating from Peachy during that video because she is in such a culinary trance!  Lobster bits are in the souffle itself as it teams up with gruyere and to bring this to the upper echelons of flavor, Lobster Bisque is poured in the Souffle of your dreams.  All souffles are not the same: some are just superior.
For our poisson, we chose the Loup de Mer Grille: Grilled Branzino, Fingerling Potatoes and Lemon Sauces.  The Mediterranean Sea Bass is sourced from Greece and the whole fish is perfectly deboned.  We did not find a single bone but of course it's nature so delicately devour the super fresh entree presented in all its glory.  You'll hear ambiant music that is not too loud at all and the worldly sophistication will smoothly add to your experience at Chez Francis.  After the Lobster Souffle, Peachy's second favorite edible this trip was the Filet Mignon, grilled exactly as we asked, medium rare. The eight ounces of carnivorous victory was joined in perfect fashion by green beans and wild chanterelle mushrooms.
The Bearnaise Sauce is pure legal ecstasy!  You must try it.  It's warm, not hot and the structure of the butter is consistent.
Chez Francis might be French, but they know they are in America so you will discover Les Burgers de Francis is a menu section. We chose the Bistro Burger and as you see, it's perfectly medium rare as ordered.  It's composed of 50/50 Short Rib and Brisket Blend, joined by intoxicatingly delicious caramelized onions and fresh french fries.  Allow us to emphasize the word fresh because they were cut the morning we ate them.  They are the best french fries we've had in months.

Don't miss the Garnitures section because it's highly competitive and ultimately delicious!  Above, say enchante to Francis's Herbed Puree: mashed potatoes in escargot sauce are the answer to the side dish you want to every meal and the Green Beans further embellished with roasted dry almonds bring extra nutrition to your experience!  Chez Francis has all the elegance you seek with none of the pretention: everyone is graciously friendly.  We find no weaknesses: the culinary feats, the atmosphere, the superior leadership, decor, location and of course the bathroom make Chez Francis a coveted dining destination.
Reverence for fine French cuisine is at its most delicious at Chez Francis!
General Manager Olivier who hails from Limoges, below, was a total professional delight to work with and when Francis is in France and not in New York personally, you can be confident this will be a flawless dinner experience.  Jean-Luc Legouix, Assistant General Manager from Bordeaux is also a spectacular addition to this winning team. Stay tuned because we hear there will be some smashing springtime choices around the corner with more fish and a lighter focus.
